Apple_Jar

I love any meal that can be stored in a jar. This is a fast, delicious, and filling breakfast or snack that I often bring with me when I’m on the go.

Whole Ingredients:

2-3 apples, cut into bite-sized pieces

splash of water

1/2 cup of berries of any kind

1/2 tsp of cinnamon

1 tablespoon cocounut oil

1/8 cup of pumpkin seeds

3 tbsp cup of hemp seeds

1 can of coconut cream, not the 'light' variety

1 tsp stevia

Tools:

jars

a whisk or hand mixer

bowl  to whip the cream in

a frying pan

a wooden spoon to stir

The Creation:

1. Heat the frying pan over medium heat and put a splash of water and the apples in the pan. Stir-fry them until they begin to soften, adding more water if necessary until the apple is beginning to look more like a sauce.

2.Add the berries and coconut oil and turn the heat of the stove up just a bit while continuing to stir frequently. Once it is all blended, remove from the heat and sprinkle with cinnamon.

3. While it cools, whip the coconut cream. To make whipped coconut cream, leave the can in the refrigerator for a few hours, then open the can and let separate the hardened cream into a cold bowl. Use the whisk or hand mixer to whip the cream until it is silky and smooth, and then add the stevia to give it a bit of sweetness.

4. Split the apple mixture into three (or more, or less) jars. Sprinkle the hemp seeds over the top, then layer the whipped coconut cream on. Top with the pumpkin seeds and a sprinkle of cinnamon if you're feeling fancy!

5. Throw it in the fridge until you're ready to take it to go. You won't believe how delicious this fast meal is! It travels well too and can last for quite a while without being refrigerated.
